Grease interceptor (grease trap)
A tank on a commercial kitchen's drain line that slows the flow so fats, oils and grease separate and float, and solids settle, before wastewater continues to the sewer. It has to be pumped and the lines downstream of it still collect grease.
Why do restaurant drains still clog with a grease trap?
Because the trap catches most of the grease, not all of it, and an overdue pump-out catches none. The line between the kitchen and the trap, and the line beyond it, coat up over time. Hydro jetting is the cleaning method that removes that coating rather than punching through it.
