Restaurant plumbing: grease, the line to the interceptor, and hot water that cannot stop

A restaurant's plumbing problem is almost always grease in the drain line or a water heater that cannot keep up. Both stop service. Hydro jetting cleans the line; commercial water heater service keeps the hot water on.

//Quick answer

  • Grease coats the line between the kitchen and the interceptor, and the line beyond it.
  • Hydro jetting ($650 to $850 per line) removes the coating; snaking only punches through.
  • Light-commercial water heaters and recirculation are a Done-Rite service line.
  • Availability, licence and insurance documents, invoicing: ask the office; terms are not published.

01Definition

What makes a restaurant's plumbing different?

Volume and grease. A commercial kitchen sends fats, oils and grease down the line all day. A grease interceptor catches most of it, but the line from the kitchen to the interceptor coats up, and the line beyond it still carries what got through. Add floor drains, mop sinks and a dish machine, and a water heater or recirculation loop that has to keep up through the whole shift.

What fails, and when?

Floor drains and sink lines that slow and then back up, usually mid-service. An interceptor overdue for pumping that sends grease downstream. A water heater that cannot recover between the dish machine and the hand sinks. Each one costs service hours, which is the real price of a restaurant plumbing failure.

02When it applies

When is jetting the right call, and when is it maintenance?

Any restaurant line that has backed up more than once should be jetted, not snaked, because the problem is the coating, not a single obstruction. Many operators put the kitchen line on a jetting schedule so it never reaches a backup. The camera shows the condition of the line before and after.

When does the water heater need a commercial approach?

When the demand is continuous and the recovery of a residential unit cannot keep pace, or when a recirculation loop feeds hand sinks across the floor. Light-commercial tanks and recirculation systems are the equipment Done-Rite services for restaurants, salons, shops and multi-unit buildings.

03What goes wrong

What goes wrong with the snake-it-again approach?

The line opens for a few weeks and closes again during a Friday dinner. Repeated snaking on a grease line is the most expensive way to not clean a pipe. Jetting, on a schedule, is the honest fix.
